不知道從什麼時候開始迷戀起自己手工做料理，或許是想起以前阿嬤、又或者是想起小時候，總之是有點感觸的吧，似乎想循著小時候的回憶帶給自己更多、更多的重溫回憶的感受吧。而憑著記憶和感謝網路上的前輩的經驗，這次做了《手工麻糬》連「花生粉」都是自己製作，芬芳的美妙味道以及扎實軟 Q 的口感根本不是一般可以路邊攤的麻糬可以比擬的（驕傲）。經過 2 次實驗與改進，終於完成讓流氓顆心滿意足的麻糬喔，當然毫無保留的分享給大家，希望每一個人都能品嚐上自己做的麻糬，因為真的完全沒有想像中困難喔♡一起來回憶我們的小時候吧！
《手工麻糬》其實食材真的很簡單，現在一般超市比較難找到糯米，建議去市場或米行找找，米行又會比市場的更好。我們這一次去市場買的很多米蟲，在清潔上比較麻煩，但也只能安慰自己，這糯米很健康喔（笑）。
手工麻糬食材（4人份）
麻糬
- 糯米 1200 克
- 打糯米漿的水 400 克 （之後會濾掉）
- 沙拉油 50 克
花生芝麻沾粉
- 花生（去皮） 200 克
- 芝麻粉 50 克
- 冰糖 20 克
↓首先須先講糯米洗淨，尤其如果是主打有機糯米，上面米蟲肯定不少。
↓洗乾淨後將糯米泡水使糯米質地變較軟，這樣後續再打糯米漿質地會較細緻，浸泡時間建議 4-6 小時不等。
↓而浸泡過後將水瀝乾，然後倒入調理機。
↓接著加入水，而水其實多寡都沒關係，因為晚點都會要瀝掉。但不建議水太少，因為調理機會卡住打不動喔。
↓衝衝衝，我的麻糬就靠你啦♡
↓然後準備粿袋或豆漿袋，建議是做成「袋狀」或具有「縮口」的較佳，因為我之前有試過用「粿巾」會很難進行後續「壓米漿」等動作喔（抓一邊米漿就往另一邊跑啊啊啊啊）。
而我是用瀝咖啡或茶渣的「束口袋」，再搭配一層豆漿袋，總共兩層一起使用。內有一層束口，才不用擔心瀝乾的米漿跑出來！
↓外層這就是豆漿袋，因為沒有束口，所以自行打個結。而因為豆漿袋的縫較小，才能夠順利瀝乾水喔。如果找縫隙太大的，會連米漿都被瀝出來啊啊啊啊！
↓接著找各式各樣的東西壓住米漿袋，我是用沾板和醃製缽。壓米漿的時間約 1 小時左右即可，不用一定要瀝得很乾。也可以拿起來時再用手按壓一下，把最後剩餘的水擠出來。
這樣就完成俗稱的「生麻糬」嚕：D
↓然後取出一小塊生麻糬，約 1/3 的份量，丟進鍋裡煎一下。
↓接著把其他生麻糬一起丟進去。
↓並且倒入 50 克的沙拉油，並將生麻糬和剛剛煎好的麻糬一起均勻揉捏。
↓建議可以帶塑膠手套會比較方便呦：D
↓喔喔喔喔喔，終於完成嚕（才怪）！！！
接著準備電鍋，要把這團麻糬丟進去處理啦！
↓蒸個 30-40 分鐘就會熟成了，外鍋水只要放 2 杯即可啦。
↓看到這充滿小時候回憶的白麻糬，嘴角還真是忍不住上揚呢！還真是可愛：D
備註：建議可以在蒸的容器塗上一層油，或者鋪上料理紙，這樣麻糬才不很難取出喔。
↓裝袋、裝袋啦♡
記得裝袋前塑膠袋內層也要抹上一層油喔，這樣麻糬才不會和塑膠袋黏踢踢啊！
↓接下來介紹「花生芝麻沾粉」怎麼製作呢？流氓顆是去全聯買的「土豆花生」和「熟成黑芝麻（這樣才不用再煮）」，而土豆花生因為帶皮，味道會有點苦，所以一定要去皮喔喔喔喔。
↓一樣用調理機打的，因為希望沾粉帶顆粒，所以不用打太久呦。一打開頓時花生香氣四射（？）實在太讚了啦！
↓咕嚕咕嚕的麻糬來沾一下花生粉啊啊啊啊啊啊，整個心花怒放啦♡
↓滾完花生粉的麻糬實在可口至極！！
不過剛剛看到製作麻糬的過程，你們就知道需要用到多少油了，所以麻糬熱量非常高（哭奔）所以大家在吃麻糬的時候還是要節制喔，一天幾顆就好。至於手工麻糬因為沒有添加防腐劑，其實半天就會散掉，建議大家做少量一點一餐吃完是最好的。不然一定要放到冰箱，以利保存，當然也不能放太久，最多保存期約 3 天，還是要儘快趁新鮮時吃完喔：D
