在還沒有雪隧之前《柯氏蔥油餅》（原礁溪蔥油餅）就是在地人氣小吃了，每到下午鄰近的學生和上班族都會來這裡排隊購買。而那時還只是一個發財車小攤販，而隨著雪隧通了之後越來越多觀光客來到礁溪也都會來吃，所以每到假日想吃更是大排長龍。不過這麼多年過去了，《柯氏蔥油餅》也從小攤販變成店面，裝潢和招牌變得更加新穎醒目，但是味道依舊好吃，每次來到礁溪只要人不多一定會排來吃！嚐嚐這個讓人想念的好味道！
以《柯氏蔥油餅》的人氣來說這樣的排隊人數並不算多，大概只要排 5 分鐘就可以買到。但假日常常是這個人潮再乘以 4-5 倍左右，沒等個 20 分鐘是買不到的。

↓《柯氏蔥油餅》從 1970 年開始賣起，不同以往以「煎」方式，而是以「炸」的方式料理蔥油餅，使得手桿的麵皮「皮酥又 Q」非常好吃！多年來不變的價格，蔥油餅 ＄25 ，加蛋 ＄30 。
↓也就是因為是用「油炸」方式，所以香氣溢滿整個街角。但相對來說也比較油，而炸過之後麵皮鬆軟，蛋香與麵香融為一體，加上特調的甜辣醬味道相襯好吃。我們每次都會塗著滿滿的！
↓從側面可以清楚看得到麵皮很蓬鬆，一口咬下蓬鬆 Q 脆口感，非常好吃！
7-8 年前就吃過《柯氏蔥油餅》覺得這麼多年來味道依舊好吃，只是與記憶中的蔥量相比似乎有變少。但是蓬鬆的口感還是非常特殊，至今仍覺得沒有一間蔥油餅能取代的！只是在假日的礁溪的排隊人潮實在非常驚人，大家可以自行斟酌一下是否願意排隊喔♡
